I'm an Italian pizza chef, helping sourdough pizza makers to build their own recipes, step by step. \n\nIn 2014\nMy passion for baking started after taking part of a very informative pizza course, in Italy, that literally opened up my mind into this world. Since then I've been making pizzas almost everyday, practicing & learning different methods to find my own. The same year in April my girlfriend -Martina- and I decided to move in London for an experience. It was very exciting moving from a little town close to Bergamo to a big city! \n\nIn 2015\nWhile I was managing a pizza place in central London I created my first (and only) sourdough starter from scratch, Johnny. At that time sourdough wasn't so popular in Uk so I started to self learn about it day by day and in June Martina and I decided to open our first pop up store in Old Street: One n One Fashion n Pizza. We created a cozy friendly environment where people could shop independent small brands & eat our traditional Italian sourdough pizza. \n\nIn 2017\nWe opened our permanent shop in Spitalfields where in October of the same year I've started teaching "How to Make Sourdough Pizzas". It was great to meet over a thousand people -coming from all over the world- passionate & curious about sourdough. I shared with them all my knowledge about pizza and “a piece of Johnny”! \n\nIn 2020\nI wanted to do more and share my passion & knowledge to a larger group of people every single day so I opened my first Instagram account @theheartofpizza. \n\nI called it “The Heart of Pizza” because I believe the dough base -the heart- is the most important part of pizza making process. To me It doesn’t make sense having fancy, tasty & high quality toppings if you don’t have something as delicious underneath. \n\nMy aim is to encourage people to build up their own pizza recipes giving them the right skill & self confidence to do it!
